DESIGN
We have established a strong reputation for being effective collaborators, coordinators and project managers. Working together and communicating effectively is the most effective path to success.
DESIGN PROCESS
Most restaurateurs know, at least in general, their market and the concept, menu and type of facility they want to develop. These ideas must be articulated effectively so that all those involved in the development understand the concept completely. We work with our clients to put their ideas into a clearly written document which addresses all the critical issues related to service, operating procedures, space planning and design.
Architects and restaurant interior designers prepare their design based upon the owner’s needs and requirements. Too often, this information is based on informal discussions with the operator or assumptions that are incomplete or invalid. We prepare a comprehensive design program based on a detailed Operational Plan that can be used by all members of the design team. This written program defines the required spaces, relationships, design elements, seating and other essential components and features required for the successful design, construction and operation of the proposed restaurant.
We understand how restaurants work. In collaboration with your architect and interior designer, we develop the overall space plan, design the kitchen, bar, service and support areas and seating so that they function properly without compromising the aesthetic elements or design integrity created by your architects and designers. We prepare complete construction documents (drawings and specifications) for the work to be performed under our scope of services and coordinate our work with the other members of the design team.
Throughout the design and construction process, unexpected conditions arise which must be resolved. Our experience in construction and our understanding of operational requirements and constraints enables us to resolve these issues quickly and in the best interest of the owner and operator. We often serve as the owner’s Project Manager to oversee all aspects of their restaurant development and coordinate the work provided by all members of the development team.
Our involvement in projects sometimes occurs after the design is complete and construction is about to begin. In these situations, we review the completed construction documents for potential problems, conflicts or omissions in the documents that either directly or indirectly affect the flow, function or operation of the restaurant.
PURCHASE, RECEIVE AND INSTALL EQUIPMENT
We are a professional purchasing company that maintains national and international sources for equipment, fabrication and fixtures. We have established relationships with manufacturers for standard items, custom fabricated items and specialty products. We base purchasing decisions on many factors including operational requirements, quality, availability, price and service. We work with large volume purchasing organizations in order to negotiate discounts greater than published prices for our clients. Our freight management services monitor shipping schedules, routes and delivery at discounted rates. In addition to purchasing, we offer full installation services. We work with professionals who have extensive experience installing equipment, beer/wine equipment and refrigeration equipment. Our clients are not obligated to use our services for purchasing. This service is offered independently of our design services. However, the most seamless means to executing a successful project is to see it through from design to full installation.
PURCHASING PROCESS
We provide a comprehensive quote that includes all equipment, fabrication, fixtures and installation services under the food scope service. We work with the owner to do our best to meet the budget constraints for the project. We can make substitutions to offer adjustments where necessary to help with budget. Installation services can include refrigeration installation, beer/wine system installation, equipment installation. If permits are required, we work with installers who are capable of attaining all requirements to complete the job.
Once the quote has been approved, we move forward with placing purchase orders with our vendors. We thoroughly review drawings against the equipment specification prior to order to ensure all items are ordered with all necessary accessories. Orders for custom items typically require shop drawings to be approved before final order placement. We review all shop drawings and redline prior to any items going into production. We also review shop drawings with our clients where feedback is necessary to ensure all details and specifications are met.
We have a network of receiving warehouses that we work with to receive all of the equipment that we order directly from manufacturers. Our receiving warehouses are responsible for inspection of all shipments received to review for any damage in the shipping process. If damage occurs, we are alerted and follow our vendor procedures to replace any damage. Our warehouse stage all of the project purchases until time of installation. Our installers typically assemble all equipment at our warehouse prior to installation. Our warehouses are insured and bonded.
Throughout the construction process, unexpected conditions arise which must be resolved. Our installers along with project managers are responsible for working alongside the General Contractor and Trades to ensure that the design intent is being met. Our experience in construction and our understanding of operational requirements and constraints enables us to resolve these issues quickly and in the best interest of the owner and operator. Our job is to serve as an owner’s advocate during the construction process.
Our installers along with our Project Managers will coordinate with the General Contractor and Trades to ensure that food service drawings and details are being executed in the field. Our installers help with box walks to ensure all rough-ins are in the correct locations. They help provide the GC and trades with technical information for equipment and custom fabrication. It is their primary responsibility to see that the space is prepared properly once the time comes to set all equipment according to the design. Our installers and Project Managers actively work to solve any issues that arise in the field that may require adjustments to equipment and custom fabrication. Once the site is ready for equipment, our installers work alongside our delivery team to bring all equipment and fabrication to the site to set in place.
